Myeolchi-bokkeumbap (anchovy fried rice) uses tiny dried anchovies fried crisp as topping, not stirred in. Fry anchovies separately until they pop, drain, toss in a pinch of sugar and gochugaru, and scatter over plain-ish fried rice — crunch and funk in contrast, not soggy fish throughout.

Shrimp bokkeumbap demands brutally dry shrimp. Pat peeled shrimp paper-towel dry, sear 60 seconds per side undisturbed, remove, cook rice, then return shrimp at the end; wet shrimp steam the pan and your rice collapses into fried porridge.

Squid is fastest: slice 1 cm rings, flash-sear 45 seconds total, pull. Overcooked squid goes rubber and leaks water that ruins grain separation; better to undercook slightly since residual wok heat finishes it after plating.

Seafood bokkeumbap wants less soy, more pepper and scallion, and sometimes a squeeze of lemon to echo coastal stalls. A pinch of MSG or dashima powder replaces the anchovy stock you cannot make in 30 seconds — honest shortcut, not cheating.

Keep seafood fried rice drier than meat versions. Reduce kimchi juice by half or omit gochujang so the sea aroma is not masked; let the ocean be the point, not an afterthought.
